Coconut Macaroon

All of my clients love my assistant Matt and I have to agree that he is pretty great.  I’m amazed that he has stuck with me at Kuzak’s Closet for a year now, time flies!  When he started working for me I thought it would be temporary but after all this time he is still hanging around.  I asked him what keeps him coming to work and he said “lunch.”  He and I have that in common, we both love food.  The only problem is that he is a very tall 22-year-old male and I am an average 32-year-old female, let’s just say the calories affect me more than they do him.

Lately we have been so busy with organizing projects that I have had to send Matt on his own to help some clients while I am working on other jobs.  It was really difficult for me to give up control but I realized that he has watched me in action for long enough to know how to manage and execute a project as well as connect with clients and help them achieve their goals.  I know if I want to expand my business that I am going to need to do this more often so it has been good practice.  Last week he helped one of my client’s organize her storage unit and I was really happy to receive this note from her after the session…

“Matt is a ROCK STAR!! He was such a big help. Needs no direction and listens to instructions if there are any. He also makes great suggestions. He is a pleasure to work with!”

How nice of her to tell me!  I wrote her back and said that he probably had the most peaceful day of work without me bossing him around, ha!

I don’t mean to tempt you from cheating on your new year’s diet but I’m going to assume that you already have!  Let’s be honest, it’s been a whole week since the new year!  It’s hard for me to diet at this time of year because the chilly temps make me crave comfort foods.  The only meal I struggle with is lunch (if I get to take one) because I typically let my assistant Matt pick where we go which isn’t always healthy.  This week we have are working on a huge organizing project at a home in the area so we have been to all of the neighborhood hotspots, in-n-out burger, wendy’s, subway, and togo’s.

Thanksgiving Meal Plan

I have always loved Thanksgiving, mostly because I am a food lover but also because it is a holiday that you can spend in a comfy sweater cooking in the kitchen while watching football.  As a kid I would get up early to watch the Thanksgiving Day Parade with my sibs and then help my mom with the cooking, setting the table and doing the last minute vacuuming before the family arrived.  (you know how much I love to vacuum!

I didn’t feel guilty about making this treat because I had all of the ingredients on hand.  Something inside of me said it didn’t “count” as cheating on my low carb diet because I didn’t have to go out and shop for thing.  I would actually be doing myself a favor by making it and getting all of the extras out of my pantry so I wouldn’t feel tempted anymore, ha!

Nutella Cupcakes

I hope you all had a wonderful Mother’s Day weekend!  We had beautiful weather in Northern California and we spent the weekend working on the coffee table I picked up at Salvation Army and the picnic table we snagged for free.

Today I am sharing a sweet recipe for Nutella cupcakes.  Chris loves Nutella so we usually have a small stockpile in our pantry.  One of the containers was going to expire this month so I thought I would try baking with it to use it up.  I Googled recipes for cookies and cakes but this recipe from a blog called Piece of Cake won me over.

Whole Wheat Chocolate Chip Cookies from Joseph’s Grainery

I love substituting whole wheat flour for regular flour when I bake but I had to learn the hard way that you can’t just do a straight swap, you need alter the recipes bit for the best results.  I remember when I tried to make my homemade pretzels with whole wheat flour without altering the rest of the recipe and they were hard as rocks!  One of my favorite whole grain recipes sites is Joseph’s Grainery.  They share the best recipes using their whole grain products and take fabulous photos of their food.
