Asparagus is in season right now and I have been loading up on it at our Farmer’s Market. Usually I grill it with mushrooms or roast it in the oven with summer squash but over the 4th of July I decided to kick it up a notch and try something new. I got the idea to add olives, almonds, and parmesan cheese in a magazine and I’m so glad I tried it, it was so delicious. You can either roast it or put it in a grill basket on the grill. Today’s summer salad reminds me a little bit of the chickpea salad that I made a few weeks ago. This salad uses orzo, a pasta that I have not cooked with before. It is similar looks similar to rice but has the texture of pasta. The original recipe from My Recipes called for feta cheese but I decided to use Parmesan instead. This would be an easy salad to pack for lunch and I think kids would like it too.

Every Wednesday from Memorial Day to Labor Day I am sharing a healthy main course salad recipe and I am calling it my Summer Salad Series. This chickpea salad has been my go-to lunch all summer long. My friend Jamie shared the recipe with me, I think she found it in Bon Appetit Magazine. It can easily be made ahead of time and I think it actually tastes better after spending a few hours in the fridge. I have been so busy lately that I have had to have a cooler in my truck so that I can eat on the road and this salad always hits the spot. Give it a try as a snack or side dish too!

Just keep it simple…that’s my motto when it comes to side dishes. There is no need to get wrapped up with fancy ingredients and sauces, all you need this fall is an herb garden and a roasting pan.

I saw this recipe in the Thanksgiving edition of Real Simple Magazine and decided to use it at Christmas. I thought it would be different and maybe a little healthier than mashed potatoes, sweet potatoes are healthy right? The caramelized pecans on top really made the dish for me. Here is the recipe…
