May 29, 2011

For the last year, my sister Ashlie and I co-blogged and hosted a linky party called Sister Sister Sunday.  Each week we write about our favorite things, fashion, decorating recipes, organizing, and much much more.  It has been a great way for us to stay in touch as we live 2,000 miles apart, she is in Michigan and I am in California.

Last Week’s Favorite

School’s out for summer so Ashlie and I have decided to take a break from our weekend linky party, we’ll miss all of your comments and your projects so stay in touch!  She will still be visiting from time to time and I will continue to blog about organizing, recipes, fashion, and much much more. To thank you we are featuring our favorite recipes from last week’s party.

Last Week’s Favorite

Each Sunday we host a “Linky Party” so all of you can share your favorite things with us.  Thank you all for linking up last week, we have so much fun checking out your posts and reading about your families.   Our favorite post from last week’s party came from Joy over at Joy of Desserts.  She shared a recipe for a tasty strawberry smoothie, doesn’t it look delish!

Now on to Sister Sister Sunday
Ashlie’s Recipe

My friend Dawn mentioned this recipe last summer and I have been itching to make it ever since. When my sister said that she would like to share a cake recipe for this week’s Sister Sister I thought it would be a great time to finally try this light and tasty cake! It is super easy to make and I love that it is guilt-free by being low fat.
Decked Out Angel Food Cake

Ingredients
1 Angel Food Cake Mix prepared according to directions (or feel free to skip this step and buy a store bought one!)
1 Large Container of thawed Cool Whip
Fresh Berries of your choice

Directions
Once your cake is done and cooled.  Cut the cake in half horizontally with a serrated knife.  Scoop the bottom layer out slightly saving the scooped cake to be later mixed with your cool whip and berry mixture.

Mix half of your thawed Cool Whip with some freshly cut up berries and scooped out cake.
I used strawberries but this cake would be excellent with raspberries, blueberries, blackberries or all!

Finish but re-applying your top half of the Angel Food Cake.  Frost with remainder of Cool Whip and top with berries.

Serve with a drizzle of chocolate if desired. Enjoy!

This cake was a bit hit with my family and I am sure it will be with yours!

Mandy’s Recipe

The rich caramel frosting on this cake is so gooey and sweet, it’s hard to believe the recipe is from Cooking Light.  I tried it because I had everything on hand and a craving for something sweet, gotta love that!  If you are looking for something special give this a try, I served it warm with french vanilla ice cream and my family loved it.

Gooey Caramel Cake

Ingredients
Cake:
Cooking spray
1 tablespoon cake flour
1 cup packed light brown sugar
7 tablespoons butter, softened
1/2 cup egg substitute
2 cups cake flour (about 8 ounces)
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup fat-free milk

Frosting:
1/2 cup packed dark brown sugar
3 tablespoons butter
1 teaspoon vanilla extract
1/8 teaspoon salt
1 (14-ounce) can sweetened condensed milk

Directions
Preheat oven to 350°.

To prepare cake, coat 2 (8-inch) round cake pans with cooking spray (I used 9 inch pans because that is what I had so my cakes are a bit thin); line bottoms of pans with wax paper. Lightly coat wax paper with cooking spray; dust pans with 1 tablespoon flour. Set aside.

Place 1 cup light brown sugar and 7 tablespoons butter in a large mixing bowl; beat with a mixer at medium speed 3 minutes or until well blended. Add egg substitute to sugar mixture; beat well. Lightly spoon 2 cups flour into dry measuring cups; level with a knife. Combine flour, baking powder, baking soda, and 1/4 teaspoon salt, stirring well with a whisk. Add flour mixture to sugar mixture alternately with 1 cup milk, beginning and ending with flour mixture.

Spoon batter into prepared pans. Sharply tap pans once on counter to remove air bubbles. Bake at 350° for 25 minutes or until a wooden pick inserted in center comes out clean. Cool in pans 10 minutes on a wire rack; remove from pans. Remove wax paper; discard. Cool cakes completely on wire rack.

To prepare frosting, combine 1/2 cup dark brown sugar and remaining ingredients in a medium, heavy saucepan over medium heat; bring to a boil. Cook 2 minutes or until mixture is thick, stirring constantly.

Place 1 cake layer on a plate; spread with 1/3 cup frosting. Top with remaining cake layer. Spread remaining frosting over top and sides of cake.

Now on to Sister Sister Sunday
My sister Ashlie loves to try new beauty products and this week she suggested that we share our favorite drugstore finds for spring.  Whether you are in a pinch or on a budget, check out what we are loving right now!  (We were not asked to write about any of these products by the companies involved, our picks are based on our personal opinions.)
Ashlie’s Picks
It is always fun to hear about the great products that my sister and friends are using.  I have come across a couple of products from the drugstore lately that I love and thought I would spread the word! We would love to hear about the great drugstore finds that you are loving right now!

Loreal Double Extend Mascara
This mascara works great! I love the 2 step application and I love the finished product! I don’t know if it truly “extends” my lashes but I do enjoy how easily it comes off after a day’s wear. No smudges or clumps!
I really like this facial cleanser by Neutrogena.  It can be used as a daily cleanser or let it set for 3 minutes and it will work more like a “mask.”  It has helped take care of some of my occasional break-outs and it is gentle enough to use everyday.
Mandy’s Picks

I am always on the go so I keep low cost beauty products in my handbag so I don’t break the bank if I lose something.  Lip gloss and lip balm are 2 of my favorite beauty tools, they both brighten up my face and give me some polish after a long day or work.

I swear I have been wearing this since Junior High!  Don’t you remember pulling out the concealer to cover up those teenage breakouts, ha!  For less than $5 you can look good in a pinch…

CoverGirl - Invisible Cream Concealer, Light 125 - .34 oz
I have tubes of this stuff in every drawer in my house, my car, and my purse, I love it!  It comes in packs for 5 or more and you cannot beat the price.  My favorite flavors are bubble gum and red raspberry, how about you?
