Mimosas, Manicures, Mexican, Margaritas

Yesterday was my birthday and I had such a nice day! When I lived in Chicago,  I always went to visit my family around my birthday because I had that week off at my old job, this was the first year we didn’t get to celebrate together. My mother in law called to say hello and after I got off the phone with her my sister, mom, and nieces Audrey and Lilly skyped me in the afternoon. They were able to watch me open the birthday presents they mailed to me, it was really cool. I got lots of calls and texts throughout the day, I wish everyday was my birthday!

My friend Colby came over later in the day and we enjoyed mimosas in my dining room and then went to get manicures. What a treat!

For dinner Colby, Chris, and I went to a great little Mexican Restaurant for dinner. The only way complete a day that started with mimosas and manicures is to go our for Mexican and margaritas!

Flan Dessert
 

Even though we had dessert at the restaurant, we had to go home and enjoy the birthday treat I made for myself (with some help from Chris of course).

My mom always made this oreo icecream delight when I was growing up.  It is so delicious and such a treat!  I thought it would be fun to make and it is something I can keep in the freezer for a few weeks and keep poking at (a good thing and a bad thing).  Here is the recipe:

Ingredients
1 bag oreos
1 cup butter
1/2 gallon of vanilla ice cream
2 cups confectioners sugar
1 container Spanish peanuts
12 oz evaporated milk
1 cup chocolate chips


Directions
Crush whole bag of oreos (save 2/3 cups for later)
Mix with 1/2 cup melted butter, pat into a 9×13 pan and freeze for 1-3 hours.

Spread ice cream over the frozen oreos, sprinkle with 2 cups of spanish peanuts. 
Freeze overnight!



Directions for sauce
In a pan heat sugar, chocolate chips, evaporated milk and butter.
Heat to boiling, stir for 8 minutes, remove from heat and add 1 teaspoon of vanilla. 
Pour over ice cream and peanuts, if you want to spread cool whip over when cooled and sprinkle with remaining oreos.  
Freeze, take our a few minutes  before serving so it cuts better.

 
  
  
 

Colby is so talented, she helped me design my business cards and for my birthday she made me stationary that coordinates with my cards.  The cards are so pretty, what a special treat!  I told her she needs to go into business, if you are interested in having her make cards or invitations for you send me an email and I will give you her contact information.  She put the cards in matching boxes for storage, and all of the envelopes are stamped on the front with a cute design.
