S’more Kahlua Pie

Last night I had a little dinner party with my friends Nick and Colby.  We enjoyed Margaritas while we cooked up homemade garlic bread and the shrimp spaghetti that I featured on the blog last week.  For dessert we enjoyed a dessert that I recently stumbled upon in my Sandra Lee Semi-Homemade Grilling Cookbook called “S’more Kahlua Pie.”  I was pleasantly surprised with how it turned out, the Kahlua brownie mixture soaked into the crust and the marshmallows were gooey and delicious.

My neighbor Sam came home just in time to join us for dessert (poor Sam!).  I am always putting the goodies I make for the blog on his porch, (I am starting to turn into my Granny who is known for sneaking homemade snickers bars into people’s pockets).

Sam, if it wasn’t for you I would be forced to eat mass quantities of pie, caramels, pretzels, and whoopie pies, my waist line thanks you!

Ingredients
4 eggs
1 1/2 cups sugar
1/2 stick butter, melted
3 tablespoons unsweetened cocoa powder
5-ounce evaporated milk
1/4 cup Kahlua
1 (9-inch) graham cracker pie crust
2 cups miniature marshmallows

Directions

Preheat oven to 350 degrees F.
In a mixing bowl, whisk together eggs and sugar thoroughly combined and pale yellow. Whisk in melted butter, cocoa powder, evaporated milk, and coffee liqueur. Set aside.
Place pie shell on baking sheet and place on an oven rack. Carefully pour in filling. Bake in preheated oven for 45 minutes. About 5 minutes before pie is finished, mound marshmallows in the center of the pie (they will spread as they melt). Continue baking until marshmallows are golden brown.
Let cool slightly. Serve warm. 
I love the browned marshmallows, they look just like S’mores off the campfire
