Happy Halloween! Today I am sharing a great fall pumpkin cookie recipe that my friend Alicia gave to me. They taste little a little piece of pumpkin pie!
I whipped them together on Sunday night and sent a big batch with Chris to share with his coworkers. I found these cute fall treat cups at Target in the dollar section and I thought they would make it easy for each one of his friends to could grab a few and take them back to their desks. I might have to back and pick up some more so I can serve other treats like my crazy crunch in them too.
2 cups flour
1 teas baking powder
1 teas cinnamon
1/2 teas baking soda
1/2 teas nutmeg
1 and 1/2 sticks of butter
3/4 cup white sugar
3/4 cup brown sugar
1 cup canned pumpkin
2 teaspoons vanilla
chopped nuts are optional
Combine first 5 ingredients and set aside
Beat one stick of butter for one minute, add white sugar and 3/4 brown sugar and beat until fluffy.
Combine the egg, pumpkin, and 2 teaspoons of vanilla, beat well. Beat in dry ingredients and add chopped nuts if desired.
Bake at 350 for 10 to 12 minutes on ungreased cookie sheet
Cookies need to be cooled before frosting
3-oz cream cheese
1/4 C butter
1 teas vanilla…beat until fluffy
add 2 cups powdered sugar and beat well
frost and enjoy!
I love cream cheese frosting and I am convinced that it makes almost everything taste better!
