Mushroom Risotto

Sorry I haven’t blogged in a few days, I have been in such a slump that I was having a hard time getting inspired.  This week was not as busy as my typical weeks and I honestly didn’t know how to function with so much free time.  With my business I never know when I will have a day off so I decided to make the most of it by working out everyday and cooking a ton (too bad those two things often cancel each other out!)  One night I made an eggplant pasta and another grilled pork tenderloin with mashed potatoes.  Chris has been in heaven!

Today I had met up with my client and friend Nancy to pick up some items for eBay and chat over a coffee.  She really cheered me up, don’t you just love having friends like that? Hopefully I will return to my normal smiley self by tomorrow for my day filled with consultations and meetings.

This weekend Chris and I are planning on going to see the new Facebook movie tomorrow night with some of his friends and then Larry is coming to visit for a few nights.  I am sure we will be busy running around so I thought I would make one more homemade dinner before the chaos begins.

This recipe is inspired by my friend Alex, my friend Linda’s 15 year old son. He has such a sophisticated palate for his age!  Two of his favorite things are risotto and mushrooms.  I saw these beautiful mushrooms at my farmer’s market so I thought I would whip this dish together.  It turned out really great, it was the perfect rustic dinner for such a nice fall evening.



Ingredients
1 pound fresh mushrooms ( I used brown button and trumpet mushrooms)
6 cups chicken stock, preferably homemade
6 tablespoons (3/4 stick) unsalted butter
1 piece of bacon sliced
½ cup chopped shallots (3 shallots)
1½ cups Arborio rice
½ cup dry white wine
½ teaspoon saffron threads
1 teaspoon kosher salt
½ teaspoon freshly ground black pepper
2/3 cup freshly grated Parmesan cheese, plus extra for serving 


Directions

Rub any dirt off the caps of the mushrooms with a damp paper towel. Don’t rinse them! Slice thickly and set aside.

In a heavy-bottomed pot or Dutch oven, melt the butter and sauté the bacon and shallots over medium-low heat for 5 minutes.

 Add the mushrooms and sauté for another 5 minutes. 

Add the rice and stir to coat the grains with butter. Add the wine and cook for 2 minutes. 

Add 2 full cups of the chicken stock to the rice plus the saffron, salt, and pepper. Stir and simmer over low heat until the stock is absorbed, 5 to 10 minutes. 

Continue to add the stock, 2 cups at a time, stirring every few minutes. Each time, cook until the mixture seems a little dry before adding more of the stock. Continue until the rice is cooked through, but still al dente, about 25 to 30 minutes total. 

When done, the risotto should be thick and creamy. Off the heat, stir in the Parmesan cheese. Serve hot in bowls with extra cheese.
